There's al dente and then there's pasta so undercooked that you can see the uncooked centers when you bite into it and have to pick it out of your teeth. They were very dismissive, saying it's just the style of the region, but we've eaten many, many meals in the area, and this was the only one undercooked. The pork was good. Otherwise, I'd give one star.
